Spicy Golgappa street food style!

Crispy puff dough balls- in a large bowl, add fine semolina, oil, baking soda, flour and a pinch of salt.
Slowly adding water kneed the dough until it is of a medium softness. Cover the dough with a damp kitchen towel and leave to rest for 20 mins.
After resting kneed the dough and then divide into 3/4 medium size balls.
spray fresh flour onto a clean surface and begin to roll out the ball very thin, using a small round cutter- cut out circles
Place a deep pan on medium heat with a good helping of oil heated to begin frying.
Drop each circle into the fry and they will immediately puff up, keep flipping until they are golden brown all over once cooked pop onto kitchen roll and once cool pop in a container.
Add cilantro, mint and green chilli to a blender to create a smooth paste.
Then, in a large bowl add tamarind juice, the paste, coriander powder, ground cumin, chilli powder, ground pepper, sugar and salt and mix well.
Make a small hole in the pani puri and then add a few chickpeas, chopped potatoes, tomatos onions, yogurt etc.
Then dip away in the spicy water!
