This gorgeous onion bhaji , Onion Fritters recipe will have you feeling like your on the streets of India tasting and smelling the wonderful aromas of fresh authentic food!

Methods

Slice onion, chop green chilli (Optional) and chop fresh coriander

Add garlic (Optional), spices ( Garam Masala, Turmeric, Red Chilli Powder, Ajwain Seeds) in to sliced onions, coriander , green chilli and lemon juice and then mix together.

Now Add Gram Flour (Besan Flour, Chick pea Flour) and Rice Flour (For Crispiness) and Mix well + ADD SALT

Add water to make batter which should be not too thin or not too thick

Fill a wide deep pan with oil to 10cm and heat on a medium temperature. To check the heat drop a raw piece of onion in and watch it sizzle.

Pop a cooling rack over a plate close to the pan. Gently lower the balls of bhaji into the hot pan using tongs. - And watch your hands!

Keep turning until golden brown, then remove and place on the cooling rack. (You may with to absorb some of the oil from them so place them on some absorbent paper or kitchen role).

Sprinkle with a pinch of salt or Chat Maslal and serve with lemon wedges and cool mint raita and mango chutney - So so yummy. Enjoy.
