Mumbai style Pav Bhaji

We made this and it was exquisite! It took us back to those evenings at a Pav Bhaji vendor on Juhu Beach, Mumbai. It’s prepared in front of you on a huge tava (pan).

Methods

Take the vegetables(cauliflower, carrot, potatoes and green peas) and cut them into small pieces. Transfer the vegetables in a pressure cooker. Add 1/2 cup water and salt as per taste. Pressure cook the vegetables for 15mins.

Once the vegetables are boiled, with the help of potato masher, mash all the vegetables together.

In a pan, heat 1tbsp of butter at medium flame. Once the butter melt, add 1tsp cumin.

Add 2 chopped onions. Saute it till it turns golden brown. Then add 1tbsp ginger-garlic paste. Mix it well.

Add chopped tomatoes and chopped capsicum. Cook it till tomato and capsicum turns soft and all the water evaporates.

Add 1/4tsp turmeric powder, 1 and 1/2 tsp of red chilli powder, 1/2tsp of corainder-cumin powder and 2tsp of pav bhaji powder. Mix it well and cook it for 3-5mins

Now add the mashed vegetables. Mix it well. Add water as required. Cook for 10-15mins on medium flame.

Add 1tsp lemon juice. Cook for a minute. Turn off the gas. Garnish it with freshly chopped coriander leaves.

Take the bhaji in a serving bowl and garnish it with a cube of butter. You can serve it hot with chopped onions and lemon wedges along with buttered pav bun.
