Lets get marinading!
mix together- 3 tbsp coriander seeds, 2tbsp cumin seeds, 1 tsp black peppercorns, 0.75 tsp whole cloves, cardamom pod seeds 1tsp, 1 cinnamon stick
Add to the frying pan and gently toast until you can smell some great flavour! Pop the mix into a pot.
In a bowl mix together the yogurt, oil, vinegar, ginger and garlic. stir in a pinch of salt and then add 3.5 tbsp of the spice mix that you just made.
once added pop in a blender to give it a good swizz for a creamy paste.
cut the lamb into thick slices and slash the edges to allow for the marinade to soak. Coat all of the lamb slices, let to marinade for no less that a couple of hours.
Once ready to cook- pre-heat the grill to the highest setting. Put the lamb onto a foil lined baking tray and cook for 10-15 mins.
Turn halfway allowing the outside to become a little charred for a great smoky flavour!
And there you have it! a great starters or a main course dish to go with rice, curries and breads!
