Firstly, dry roast about 3tbsp of chana dal for about 2-3 mins. Let it cool down.

Blend 1 cup of freshly grated coconut, tamarind, roasted chana dal, green chillies, ginger, garlic, hing, sugar and salt in a blender or mixer. Add water as per the required consistency of the chutney. Blend them into smooth paste. Transfer the chutney into a bowl.

For tempering, In a pan, heat 1-2tsp of oil at medium flame. Once the oil is hot enough, add mustard seeds, cumin seeds, dry red chilli, urad dal and curry leaves one after the other. Stir fry it until urad dal changes its colour and mustard seeds begin to splutter. Add it to the chutney. Mix it well.

The delicious coconut chutney is ready to serve. You can enjoy the coconut chutney with dosa, idli, uttapam or rice dumplings.
