Chicken Biryani is one of the most iconic Indian dishes. This street food style recipe hits the spot with its array of glorious spices and colour. You can even replace the chicken with paneer for a veggie version.

first of all, smother the chicken with ginger and garlic, and leave to rest.

Fry the sliced onions till crispy golden brown in colour, move the onions into a container and poor the oil into a large bowel and set to the side. When cool, grind it coarsely.add red chilli powder, half of the mint and coriander, lemon juice, green chillies, the ground spices (powdered-cumin & coriander, cardomom, black pepper, cinnamon, cloves, nutmeg), crushed onions, yoghurt. add the chicken and Marinate for 2 hours.

In a deep pan, put the chicken along with the marinade and cook on medium heat until the sauce is ready and the oil is separated.

Boil water, when hot enough add the remaining spices whole cloves, bay leaves, cardamoms and cinnamon then add salt and the rice. Parboil the Rice. Do not let the rice cook completely. Drain the water and keep the rice to one side

To layer the biryani, add ghee and layer rice then chicken sauce then rice and then add the saffron milk to the top. Put the remaining ghee, coriander, mint leaves to flavor.

Seal the biryani and on slow flame let it cook for about 20-30 minutes. And there you have it, a deliciously home cooked chicken biryani.
