Methods

Add the oil to a large pan and heat through on a high heat. Turn the heat to a low to medium, Add the cumin seed and stir fry for approx 1 minute or until they begin to splutter.

Add the asafoetida and turmeric and stir-fry for 30 seconds, add the ginger and garlic paste and stir for a further 1 minute.

Then add the chillies and onion and fry for 5 minutes or until the onion turns golden.

pop the heat back up to high and add the potatoes and cauliflower, cooking through for about 2 mins. Add 750ml of water to the pan and stir in well- cover for 8minutes on medium heat- stir occasionally

Add the garam masala and a pinch of salt. Reduce the heat to low and simmer uncovered for 5 minutes to thicken the sauce.
